Save that and make jambalaya!" 🤣 We use andouille sausage for Jambalaya, red beans and rice, and gumbo occasionally. So good, but then again, we like cajun food.     This is one of my favorites. I wasn’t a fan of sauerkraut until a grandmother came to the church for a retreat. Her Son was part of the clergy and he and his Mom came from Germany. The church is a resort for people from all over the world. I met some wonderful people from Russia, Myanmar, Philippines, Germany, Italy and more. So I included the recipe that she shared with me.

    * 1 qt sauerkraut, Not drained
    * 1 tablespoon caraway seeds (Opt)
    * 1/2 cup brown sugar
    * 1/2 cup white sugar
    * 1 apple, peeled and diced
    * cooking spray
    * ½ pound bacon, cut into 1-inch pieces, cooked crisp
    * 1 large onion, diced
    * 1-15oz can petite diced tomatoes, drained

    Directions
    1. Preheat the oven to 350 degrees F (165 degrees C). Grease a 9×13-inch baking dish. Pour sauerkraut with juice into baking dish.
    2. Place bacon and onion into a skillet over medium heat, and cook until bacon is almost crisp and onion is beginning to brown, about 10 minutes.
    3. Stir the bacon mixture into the sauerkraut. Along with all remaining ingredients. You want some of the liquid to evaporate.
    4. Bake in oven until hot and bubbly and some of the liquid has evaporated. About 1-1/2 hours.

    I use the nuggets with onions and peppers really whatever you want then add sweet n sour serviced over rice.
