Nice idea for a gift, Risa. I have to tell you my vanilla story: just remember where you store the bottles to "age". I made some (pre-instant pot) years ago, put the bottle in the basement and promptly forgot about it. When I remembered, years later, I couldn't find it! it's still down there somewhere and will be VERY well-aged by now LOL! Also, you said "an inch in the bottom" and I know you mean water in the IP, but newbies might need to know the amount as cups. Really newbies might not remember you have to add water for pressure to build. Just sayin'
