Yes. Ypu def can do this with canned chickpeas. It the ONLY way I can eat them.. and I always add Self rising Cornmeal for the binder.. TRUST ME. EVERYONE THAT HAS THEM MY WAY WANTS THEM THIS WAY ALL TIME.. simply because mine aren't GRITTYand sandy tasting… just not good w soaked chickpeas IMO… canned is soo much better.

You can use canned if it is firm. Not all canned is firm so it will be mush.
Make sure it is very firm if using canned

In Egypt we call it Ta'meya in most cities and also falafel in some, but we use dry fava beans instead of chickpeas and i think it makes falafel better
Do you add the tsp of baking soda to the soaking water before the 12-24 hour soak or after the CP’s have soaked for that time?

I've used canned ones & they don't taste any different if you rise them .
Uh, I made them with canned chickpeas a couple of times, and they were delicious.
