Cheese or butter for me, not both. I mean I love a warm, buttery cheese sauce with semolina for thickening coz they don't call it tasty wheat for nothing. I mean I love the thought of drizzling that thick cheese over sum sticky meatballs placed on a broccoli crown. And you already know I wanna have that with some flat bread or even rice paper to make spring rolls with Capellini noods. And you know I wanna top that off with a gateaux vanilla slice paired with a little cheese cake. So make no mistakes the man likes butter and cheese, but I never thought I'd have it on my steak.

Iirc to do the quenelle you need to dip your spoon in hot water for a while and you “roll” the butter against the side of the bowl as you scoop

A good compound butter is like a good compound movement. It involves multiple joints and work multiple muscles or muscle groups simultaneously.
So to make a quenelle, you need room temp butter which you had in the vid, but the key is putting your spoon in hot water will prevent your butter from sticking to the spoon and you can shape it a lot easier.
If you didn't already, I think the trick to the fancy butter is dipping the spoon in hot or warm water. It looks tasty!!

To do the spoon trick I think you need to cool the butter down a bit more. That way the shape can hold more.
If you ask me, if you wrap the butter and put it in the fridge, the spoon butter effect will work a lot better 👍
