    This answered so many questions about Einkorn flour. But did you mention that it is delicious? There used to be a baker in town who made and delivered Einkorn sourdough, and I had trouble not eating the whole loaf up at once, it was so tasty. I like bread as a vehicle to get meat and cheese into my mouth, but this flour has so much flavor, it's yummy by itself. I enjoy you and your family so much, especially little Daniel. So precious and happy. You're creating a beautiful house, memorable family meals, and loving relationships that will see them through life.

    Love the idea of this as I have problems with my gut and bowel. I pile on weight if I eat bread everyday and that isn’t good but I love a piece of toast or a sandwich and it’s easy being on my own xxx

    I developed gluten sensitivity several years ago, and then a year ago I discovered einkorn, thank you Lord! But I still have to sourdough ferment or I have some problems with it. And it is cooked in a covered cast iron Dutch oven (because it has to steam itself) . Have you ever seen a cast iron covered loaf shaped pans? I'm hoping to find something tall enough that the bread won't rise up against the lid.

    It's not just about hybridization that makes any grain harder to digest.
    Old timey farmers shocked their grains. It doesn't lay on ground- it stands and doesn't pick up the fungus and bacteria from the ground.
    Then the wheat is winnowed
    Modern grain harvest methods have actually contributed to grain sensitivity.
    The question is then raised: are we willing to go back to slower, healthier harvest methods for the sake of our health?

    Your baby is getting big and heavy in there i see!! I have a baby boy 3 days older than yours! Moby has been my primary mode of survival as well, until a few weeks ago. He's too big to wear in the front anymore. Transition to mommy's bed for naps has gone pretty well. Still trying to work out some semblance of a routine….
