    Look at that! Good to know about the Xanthan version cause mine rose the same way after 1/2 tsp. You’re definitely pro at making this bread. I’m still learning how to get stiff peak with my hand mixer, lol!

    Has anyone tried powdered glucomannan, the stuff miracle noodle is made of. It might also upset the gut like inulin. I’m down to my last 30grams of egg white powder so I cannot experiment until I find an egg white powder source. But I was thinking that it might offer some soft chewiness. I’ve seen it used in keto French fries.

    I'll have to try these! And the balling up the bread (which I would squish it long ways), I've done that as a kid and would still do it if I ate regular bread. (Come to find out, my brother used to do it too lol!) If I make this, I'll try squishing it again! These look so yummy! Thank you for sharing!

    I think the original with the egg yolk/whole egg powder is just fantastic. My top of the bread turns out better than what you show us. It does not fold/sink back in that much and just looks beautiful right out of the oven. It does not break open either. I sprinkle a layer of shredded cheese on top. I think that gives it structure and is actually nice and crispy. For flavor I add caraway seeds and/or toasted sesame seeds to the top surface. So delicious. I even added caraway seeds to the batter and that was a good taste in the finished bread. Kind of like rye bread. It was too much though. That is not a good fit for all sandwiches.

    I will try the arrowroot powder. Ordering that right now since that is not too expensive.

    I read some of the comments and I don't taste anything eggy. This is a perfect bread-like vessel for any sandwich from just butter to burgers. These slices withstand the juiciest burger without falling apart like "real" bread.

    Thanks again for perfecting this bread (and continuing to do so). I bought an airfryer now too and a slice of this bread melted over with cheese and some garlic… Heaven and it takes 4 minutes. I bought the instant Vortex because you have that. Toasting this bread in my toaster never worked. It burns so easy, but in the air fryer… it toasts perfectly.

    I have used your bread recipe and have added the dried egg yoke and love that bread. Thanks for doing all the trials of this bread it just keeps getting better will be trying the Arrow Root in my next recipe

    I have no idea why but twice now I've tried the egg white powder and water recipe and both times it DID NOT whip up; just stayed liquid. ?????? Otherwise, the addition of yolk powder/whole egg powder does make the bread (made with egg whites) so much better ! Any idea why my EWP and water isn't whipping?

    I tried the arrowroot recipe but didn’t have anulin so I added 1/4 cup Allulose, it shrunk so much from the bottom but the taste was great and super soft like wonder bread. I can’t wait for my anulin to arrive. The whole egg version always comes out perfect. I only have trouble when I use the egg yolk powder I think the humidity in my area has to do something. The crust was soft, bread not spongy and definitely not wet at all. I might try same recipe but using dried whole egg. Thank you

    Thanks for the trials. I've been using 1/2 tsp but I've also been using the liquid egg whites and egg white powder. I've been looking for an excuse to stop using xanthan gum because I think it causes me some digestive issues. (I've started replacing it with glucomanan.) This will do it! LOL ;-D

    Nili, thank you so much for your experiments! Could you try to substitute yolk powder with other fats such as butter? I am curious if different fat sources will work the same way and give such a great bread-feel structure. Also, can you substitute arrowroot for psyllium powder?

    When all is said and done you will be able to publish the definitive cookbook for that bread! I think it'd do very well! The xanthan gum bread could be called the Mick Jagger loaf! As always my absolute very very best to all of you including your mom and all of your pets! Take care, all!

    Thank you for your videos. I have not been a big fan of this bread as it feels wet and tastes eggy to me even using your last go to recipe. I am curious how the arrow root will change the feel and taste. I will let you know and I’m going to get some inulin and xanthan gum to play with.

    Inulin is a prebiotic and works well with probiotics for good gut health.. I can handle inulin just not in huge amounts…and you shouldn't be eating it in large amounts. I take Fibre Choice tablets which is inulin and I take it with my probiotics at night and i'm fine, you also have to make sure it you take inulin up the water as it is a fibre
