Rice noodles cuz it's really very important in our Bhutanese culture we call it 'phing' and often have it with beef and I have never really had egg noodles

I love Ramen, but most Vietnamese cuisines that I eat on a daily basis are rice noodles. So I have to go with rice noodles. For the pho dac biet, bun bo hue, bun rieu oc, bun cha ca, and bun thit nuong cha gio just to name a few.
Rice noodles are too soft for me. I hate soft noodles. Plus I don’t really dig rice noodles taste. It’s not bad but for me it’s meh.

I'd have to do egg noodle. I can't eat a lot of rice unfortunately, so I find egg noodles to be a great alternative. I miss you rice!

I like spicy Malaysian fried rice- noodles .It is one of my favorites but egg noodles are not bad either .
There are also tapioca noodles, mung bean noodles, wheat flour noodles with no eggs. Each has its own unique bite

I kinda don't have a big preference. I think that usually I'll have rice noodles, if given an option, with pho. I'll usually have egg noodles with Vietnamese. I believe the Pad Kee Mao or Drunken Noodles or Spicy Noodles Thai dish is always a wide rice noodle.
But I like both and don't have an overall preference.

The only dish I ever ate growing up with egg noodles was my mother's casserole. I still make that casserole, and keep egg noodles handy just for this recipe. Maybe I should branch out, but its very nostalgic
I prefer Rice Noddles. I’m half Vietnamese so I grew up eating a lot of rice noodles.
