    Oh wow, very lovely dish indeed. Just started learning how to make curry too, so I'll have to try this! Will probably add some beef though and replace the soy curls with muchrooms.

    I had to look up soy curls–honestly never heard of them before now, as best as I can recall. One source says tastes like chicken, and thus I probably would avoid these (unless that is untrue). Can one use tofu, tempeh, or something else instead of the curls?

    It seems like a lot of the benefits from Japanese cuisine are the number and variety of fermented foods. In a typical meal, it seems like at least one if not multiple fermented items.

    I made this…so good. I’m familiar with the Blue Zones…I live close to a large Seven Day Adventist community in central Alberta, where they practice mindful preparation of food…which is in direct opposition to the ranching, steak mentality of most of Alberta. It’s an interesting, dare I say disturbing, contrast. Why are we still killing and eating animals 😵‍💫😵‍💫. Japan buys live horses from Alberta, and harvests dolphins to augment their diet…they might live longer but at what cost?

    Thank you for the recipe and video! I just happened to have everything handy for once and it was really good! I was pretty skeptical about the ketchup, maple, worchestershire, soy combo going on there but it definitely works all together!
