    My favorite lunch is leftovers from dinner the night before. 🙂 If there are no leftovers, my go-to is a 2 bean burritos, using the tortillas and refried beans from Costco. I'll slice up a navel orange on the side.

    I always enjoy this style video of yours, thank you for another helpful and enjoyable recipe idea video! Also, I make those oatmeal cookies too, but add about 2 Tblsp of nut butter, and if I’m out of really ripe bananas I sub applesauce and they still come out great. 🙂

    My dietitian actually just told me to double my grains at lunch (I usually do rice or quinoa) so I also appreciate the idea of a bigger lunch. It’s when I’m my busiest too 🙂

    Now don't get grossed out when I tell you this, but when I want to bake with bananas I don't peel them. I wash them, cut off the stem and bottom bit, and puree them whole. I can double the recipe with the same amount of bananas that way. Give it a try!

    I grew up in FL and when I lived on the east coast (Titusville) we had a kumquat tree in our yard and we used to tear them up. We moved to the other coast when I was in 4th grade and I totally forgot about them until recently. That was like a looong time ago! Thanks for reminding of these! Going to look for them at TJs.
