Starch water from pasta is also super good for thickening/making a creamy sauce. Worth putting some of the pasta water in the sauce and cooking it down, or actually cooking the pasta in the sauce (adding water to compensate as it cools down)
And if you don’t want to use cornstarch, tapioca or arrowroot would probably work (other thickeners)?

I always use balsamic reduction in pasta sauces 🙂 and a little bit of sugar or agave to make the tomato flavour pop more

I put a spin on your creamy pasta recipe and made it my version of a pancit bihon, a celebratory filipino noodle dish. I added shredded carrots and spinach, with the traditional bihon noodles, and used your sauce recipe! I also traded in the oat milk for almond milk, which did not deduce the creaminess! Thank you for sharing! It was delicious 🙂
For crushing the garlic like you did, you can just lay the knife the way you had it on the garlic and strike it hard with the heel of your hand. No upper body workout!
