    It's a longer and more tedious process, but roasting the butternut squash along with roasting one or two onions and some heads of garlic makes the most delicious butternut squash soup. I can't even describe how amazing the flavor is. Having said that, I'm really digging your recipe and will try it as soon as I get the chance! Love y'all!

    I always get the bay leaf. Growing up, my mom would look for it to remove it from whatever meal it was and couldn't find it. Well… It would always, always end up in my dish! Even as an adult, I seem to always get it. My mom gets a kick out of hearing that I still have that "luck".

    Here’s a ginger tip. Buy a big chunk of ginger and peel it by scraping it with a spoon. Then whiz the whole thing in a food processor. Put it in a resealable bag and press it out thinly and freeze it. When you need it, break off a piece.

    I could eat soup everyday. I love this soup idea. For dinner, I do think soup needs a good crusty bread or soft roll and maybe a salad. I love the idea of having a number of chicken noodle soups in the freezer and Italian Wedding soup. I would do it a bit differently. If you want to kick it up a notch, sauté pancetta and olive oil, salt, pepper, remove pancetta, then sauté your carrots, onions and celery, add soup and simmer. Cool down then start the freezer process. I’ve never frozen it before but it makes sense. It’s a bit more work but well worth the time. It’s the way my Italian grandmother made it but we didn’t freeze anything.

    Day 1 of packers at my house! Guess what… they cant/won't pack the slow cooker if it's FULLLLLL of freezer meals simmering away! The foreman thought my freezer cooked dinner ready when we were with no kitchen pots or pans was genius! Let the "glamping" with good food ( that's easy) begin 😋

    Girls! You look lovely, I made some freezer meals this week and now that they are in my freezer my husband said to me, “you mean I still have to cook them”. I guess that means I will still need to cook it for him. He is 80 and I am 76. I don’t think you can teach an old dog new tricks, but “hay”. I saved myself some time and I enjoyed making them. It took me 3 days. Greetings from your RR 221 neighborhood.
