If you don't like onions, substitute with shallots. You get a milder onion flavor or try a sweet onion. I always use sweet onions. Awesome recipe and just recently got a instant pot (a walmart online sale for $49!!) And can't wait to do chilli and stew in it. Did chicken breasts and they came out soooooo tender!!!
