    muy bien Albert. Sub peperoncino for the paprika and fresh basil (dried in a pinch) for the oregano and thyme and this is pretty much exactly what I make with fresh mozzarella on a regular basis (when done with caprese sandwiches and such), though I must admit that I cook the pasta separately (usually linguine) but add in some of the pasta water for the starch and to better incorporate the sauce into al dente pasta. I will try the one-pot method next time and the Spanish spicing, though my dearly departed Italian grandmother might roll over a few times (mama mia abuela! Albert made me do it).

    Dear Albert, I just want you to know what a blessing you and your channel have been to my daughter and I. Just over a year ago we obeyed the command of Jesus Christ in the Gospel of Luke to sell all our possessions and give the money to the poor. The Lord has been faithful and true to His word and faithfully provided for us but we have very little cooking equipment and a very humble shopping budget so as you can imagine your channel has helped us so much. We got very sick trying to live on rice making basic poor man's risotto and other basic things. Then we stumbled across your channel and it's helped us afford to eat healthy nutritious meals that have helped improve our health and are cheap and easy to make and don't require any fancy cooking equipment but are so absolutely delicious!     Wow, that looks fabulous, and so easy! I wonder about substituting 1/2 cup or a full cup of red wine in place of some of the vegetable broth for added flavor depth… ๐Ÿ˜‰That totally transforms my mom's traditional spaghetti sauce recipe!
