    I use avocado oil all the time. It also has a higher smoke point than olive oil. In Canada we always use ground beef and we call it Shepherds pie. In England they call it Cottage pie when using ground beef. Even if you buy a pre-made one here it is called shepherds pie and it's made with ground beef.

    I think it's interesting that you like using xanthan gum as a thickener. I think I have seen that in ingredients before but hadn't known what it was. Normally, arrowroot starch is my substitute for cornstarch.

    I saw someone on YouTube who was collecting glass pans from thrift shops, thought that was a great idea for anyone looking to get away from aluminum pans too!
