    For something affordable and convenient: bagged salad and rotisserie chicken. Turn the bag sideways to cut to create a bowl, make the salad, and top with the chicken. It's 12.50 for a week of healthy work lunches

    I like to get all of the veggies and fruits cleaned and chopped. Then i go in and divide the meats into smaller portions because its easier to freeze

    I love the lettuce tip! I've been doing it ever since I sold Tupperware years and years ago. They had a container lid that had ridges in it and you would put the paper towel on top of the lettuce then place the lid on that, then turn it upside down to store in the fridge. That way the paper towel was on bottom and with the ridges on the lid, water wouldn't build up to wilt the lettuce. I actually learned so much about food storage when I sold Tupperware. 😘
    And the way you meal prep is perfect! Baking should always be first!
    When I was doing massive meal prepping while I was still working, I used a lot of electric appliances. They become a true lifesaver when cooking in quantity! And there are so many things you can put in them and let the appliance cook instead of standing over the stove.
    Even my electric skillet came in handy and I often used it along side the crockpot. I just had the electric pressure cooker the last few years I was working. But it became a real game changer! 🤩
    I should probably get the pressure cooker out and start using it more again. Since I'm still challenged to stand at the stove very long, I could start putting things in the pressure cooker and set it and walk away. Not that I would be gone very long. 😉
    But I need to start cooking more. And since it's already hot down here, I'm really thinking cold food. I stocked up on tuna again and I want to make my tuna pasta salad again. I use 2 cans of tuna in it but I might go for 3 and make a bigger salad. I love the convenience of having this made and in the fridge. Then I just grab a helping when I get hungry. Sometimes I put boiled eggs in it too. I think that will be a great addition.
    Something else I want to do is make breakfast. I love having a breakfast bowl. I can blame Jimmy Deen for that. 😋 But I used to buy the breakfast bowls from the freezer section and they made a good hearty breakfast. Of course with their price skyrocketing and the portion being a bit more than I eat at a time, it would be better for me to prepare them myself.
    I really wish I had an Aldi around. Just the savings I've seen since you started shopping there has been wonderful! There's one about 35 miles from me and with the price of gas, it's not exactly economical. But maybe some day my sister and I could look at their ad and go together to make the trip worthwhile. It's tough being stuck in a town with only 2 grocery stores. Not enough competition.
    Well you've inspired me to cook! Now I just have to figure out what. ☺️
