    Kiki, I had to come by and tell you how much we LOVE this stew. I have made it twice now and it is one of the best stews I have ever made. My whole family loves it. I don't have the boullion cubes but will substitute the water for Imagine brand No Chicken low sodium broth and hope is turns out just as good. Thank you, Kiki!

    in an Instant Pot…
    Sautée:
    1 yellow onion, chopped
    Add:
    1 cup diced carrots
    1 lb mushrooms
    Continue to sautée
    Add:
    1 tablespoon minced garlic
    1 tsp oregano
    1 bay leaf
    Let cook down for about 8 minutes
    Add:
    1 cup dry red lentils
    3 medium gold potatoes, diced
    1 15oz can of tomato sauce
    3 cups of water
    Optional:
    3 Not Chick'n bullion cubes (or seasonings of your choice)
    Stir

    Set IP to 15 minutes on high pressure
    Natural release (30-40 minutes)

    Remove bay leaf

    Add:
    1 cup almond milk
    1/2 cup chopped fresh cilantro or parsley
    Stir and serve

    Makes 4 servings
