    Bacon BBQ Sauce Pork Ribs 🍖 made in the instant pot & finished in the oven for a quick yet tasty meal to Celebrate July 4th! 🇺🇸

    Rib seasoning:
    3 lbs. St. Louis style pork ribs, sliced & seasoned with lime juice & salt, & 1-2 cloves of garlic, chopped
    ½ red onion, sliced
    2 roma tomatoes, chopped
    Olive oil, to taste

    Sauce:
    ½ cup bacon, chopped
    ½ red onion, grated
    1 bay leaf
    ½ fresno pepper, chopped
    ¼ cup brown sugar
    ¼ cup whiskey (optional)
    1 TBSP red wine vinegar
    ½ cup of crushed tomatoes, tomato sauce, or passata
    ¼ cup ketchup
    1 ½ TBSP worcestershire sauce
    1 TBSP lime juice
    Salt, to taste

    Add all of the ingredients to the bottom of the pressure cooker starting with the red onion, tomato & olive oil, mix to coat. Add seasoned ribs on top & coat with more olive oil. Place pressure cook on “high” for 20 minutes. Let pressure escape naturally.

    For the sauce, fry the bacon in a skillet. Drain cooked bacon & reserve some of the fat for cooking bbq sauce. Add red onion, bay leaf, fresno pepper, & brown sugar over med-low heat until melted. Add remainder of ingredients, & whisk together to combine. Cook over a low heat for ~15 minutes.

    Preheat oven to 400f. On a baking tray lined with parchment, place ribs & cover with sauce. Cook for ~5 minutes, remove from heat & enjoy!
