    I soak them but have done them both ways. Soaked need only need 35 minutes in my EPC but always need the lard component..hog jowl bacon chunks or hamhocks if you want the best taste.

    Just subscribed to you. I just ordered my instant pot today and the main reason was to cook pinto beans fast. I have my own tried and true recipe but nothing I've seen makes a good (thickened) gravy and I don't understand why you can't add salt to them. Traditionally, at about 30 minutes to the end of cooking, you at the salt and sugar and there is where you get the final flavor. I've been reading that you don't put salt in the beans because they won't cook(?). Why is that? The McCormick Taco Seasoning is loaded with salt (I have it on my shelf) and yours look like they turned out just fine, just not enough juice/gravy for us. Any suggestions?
