    These were SO good!!! I didn’t have any zucchini, but had a package of sliced portobellos that were about to go bad so I used them instead. My son and husband loved them too-they are meat eaters-and they couldn’t believe how good they were without meat, haha! Another favorite recipe of yours to add to my dinner rotation.🙌🏼 Thanks again Tia, for making this way of eating so quick and delicious!💗💗💗

    I love sheet pan meals! This looks super delicious and easy. Can’t wait to try it. One of my favorite sheet pan meals to make is a mix of veggies: red onion, green beans or asparagus, butternut squash and fresh garlic with chickpeas and gnocchi. I add plenty of seasonings and bake on a sheet pan at 350 until the veggies are soft and then I usually make some kind of sauce to drizzle on top. I bet the sauce you made here or one of your other sauces from your cookbook would be great too! Even my youngest picky eater loves this meal. You can mix up the veggies to whatever your kiddos might like.

    This looks so good! I wondered, do you use the same amount of cashew powder as you do cashews? I have been doing a sheetpan thng with chickpeas, tofu, cherry tomatoes and mushrooms. I just roast them and then mix them wiht noodles and Healthy Vegan Mama Sauce and its so good!!!

    Making this tonight! I LOVE all your recipes, ideas, and hacks. Thanks!!!! UPDATE: I did make these tonight but I roasted red bell peppers, red onion, acorn squash, mushrooms, and chickpeas. I used all the seasonings you did and they came out perfect. We built our tacos with the veggies, shredded red cabbage, some avocado, a few black olives, your sauce, and a good splash of cholula hot sauce. YUM!!!!!

    Yesss . I love that recipe, I've been making something similar with variations of rice/ beans/potatoes/spinach then toasting it in the sandwich press like a burrito !!! Yummmm
