I would have cooked it a little longer til almost falling apart. Carrots and potatoes probably overcooked, cut salt way down, would have left out half the rosemary and thyme. Imo.

I would not put store bought beef broth in that beautiful meat ( lots junk in it )we get a very meaty broth from our meat any way so water would do fine 🤷🏼♀️
Too much salt and the herbs shouldn’t be put that way. The broth has got already a lot of salt. I’m not sure if it really tastes good some of the ingredients has got already a lot of salt😊

I always did this , I sear the meat first. I use only 1/2 teaspoon of salt, let the guests decide if they want more for themselves.
Always let your meat sit for about 8 minutes before cutting in to, ❤❤
You dont need a lot of broth, the meat will make plenty of its own juice ❤
