    Your souffle did not rise because there was too much sugar in the recipe. Also classic souffle uses Bechamel for structure… yes, even dessert souffle however about 1/4 as much as traditional savory souffle. Try subbing cocoa powder for some of the chocolate to cut the sugar. Also try using cocoa powder instead of granulated sugar to coat your ramekins. Sugar melts and sometimes can restrain the rise by gripping the eggs. Stop putting vanilla in your chocolate. It adds an unnatural high note. Use instant espresso. It will boost your chocolate flavor by a magnitude. Raise your oven heat to 450…. more heat, less time…. high rise.

    Wow this looks so good I love how he makes things seem easy when I make the stuff with my mom where struggling and arguing lol 😂 not easy his recipe’s are so freaking good but some of them are hard and don’t take the patience lol

    Btw I made your Italian butter cream recipe we did change one part of it bc we didn’t have enough butter so we used 1 cup and it tuned perfect it was good we made it for my step dads birthday and we put it on the cake we made with a box cake lol we can’t make a cake from scratch it would turn out horrible lol but yeah the cake looks so good can’t wait to try it 🙂 love these recipes there so good just difficult and hard to make!

    for sure one of my favourite desserts, although I use a béchamel base that I mix up with the halfmelted chocolate(no butter since it was in the roux) and yolks
