    I don't generally go for thicker spaghetti but I bought some of the Bucatini just to try given Sams recommendation and it was enjoyable for a change.

    If this dish didn't traditionally contain garlic then whoever made it was either allergic to garlic or that was during the time of the great garlic shortages. There's no such thing as an Italian Dish and many many other cultures dishes that would not traditionally contain garlic.
    I have a general rule of tripling the amount of garlic in every dish I make unless it's a a dish that you don't necessarily want a strong garlic taste in it, on those occasions I only double it.

    Ok, good job….if you make a variation of real recipe of carbonara, everyone has personal taste, but this is not the real carbonara. First of all the bucatini are used for Amatriciana recipe, not for Carbonara.
    For carbonara you can use spaghetti or pasta corta (short pasta)..penne, fusilli etc.), but if you prefer bucatini, it's ok…Second, parsley is OPTIONAL…in the basic recipe doesn't exist, and the cheese is not completly correct because need pecorino cheese instead..altough it is possible use it, is not a problem but the main ingredient is pecorino romano.
    It is more salty than parmigiano many persons use parmigiano for low the salinity index…It's not a mistake…Same thing about the choice of the meat, the original recipe says Guanciale, but is not easy to find….so in place of this is used Pancetta that is less salty…However, I don't like parsley, but I'm sure that your version of Carbonara is really good ! 🙂

    We have one of those graters, they are fantastic. It works so much faster than a box grater. I wish they'd make one a little wider, that's all. I think the current one was originally marketed as a citrus zester, but we found it works just as great on cheese.
    I'm making this carbonara for dinner tonight, BTW.
