    I don't have a muffin pan, but I do have a cast-iron frying pan, and I can see this as a pseudo-quiche. Thank you. I'm guessing they are good lunchbox items. Can be eaten room temp.

    Mary I made a Apple pie and topped it with a crumb topping. Flour, butter, walnuts, brownsugar. I have made tons on these pies. One day after I made it I put half in fridge and when I went to eat it a blue Gray layer had formed perfectly under topping? I still had Apple filling in other container was normal. It scared me so I threw it out. It did not smell bad and it happened in one overnight in fridge. I have never seen anything like that. I peeled the fresh apples myself , do you know what it was?

    Basically, what we have here is a recipe for quiche, cooked into convenient miniature-sized portions.
    Prepared ahead, frozen instantly-ready Mini breakfast quiche.

    If you love Mc-D's egg mc-muffins, you can do something like this to make them ahead, too.
    I would use the larger-size muffin tin, as you will want to go wider and thinner layers to fit on (standard-sized) English Muffins or biscuits. In my kitchen I'm not putting it all together in one pan. I'll do the eggs in one muffin pan (or two) with some ingredients like onions and bacon and I'll do slices of sausage on a separate sheet pan or tray. I would shred some potatoes to make a layer of hash-browns in those muffin pans, separately from the eggs. Once the layers are cooked I'll assemble the layers to make a prepared package: One bacon-egg (quiche) patty, one sausage patty, one hash-brown potato layer, one slice of cheddar cheese (or two), one biscuit or toasted english muffin. I might butter the english muffin.
    Stack the layers to make my own bacon, sausage, hash-brown and egg and cheese mcmuffins, wrap them individually and stack them in a tupper-ware or rubbermaid container, put the lid on and stack in the freezer (with the date on!) and those will be easy quick breakfast meals.
    Can you imagine the tastyness of an egg mcmuffin with the healthy greens in a good quiche recipe? I can. Now I'm hungry.

    When I was doing Whole 30 I found out how to make frittatas/egg muffins. I did Whole 30 just to make myself learn how to cook veggies, and I'm so glad I did. My lazy cooking now involves just tossing veggies into eggs and calling it good. Or roast them in the oven. Takes less effort than having frozen waffles for dinner, honestly.

How many cups do you need to drink to reap the full benefits? Do you maybe have a broth recipe for vegetarians? 🥰

    I am going to make some of these so I'll have something quick for breakfast this next couple weeks! Canning season here in Iowa, I made pickles last week. I picked 15 gallons of tomatoes the last 2 days, with 5 gallons of grapes & apples & morecoming….😳🤷‍♀️😁👩‍🌾

    I have seen other recipes that are similar, but yours sound better! The others didn't have the potato, greens, or the crisp bacon on top. They were basically onion, eggs, diced ham or other meat, and cheese. Some added bell pepper. I will have to try these after I get paid! (I don't have bacon or potatoes on hand)

    Hi Mary I have a question but it's not about this video I hope this is okay but I'm trying to learn to ferment and I'm watching your videos but I think I messed up fermenting my pickles one of them grew mold on top of the water and the other ones I don't know if they're done but it's been over a week how long do I ferment these pickles and thank you so much for putting these videos out to teach us things we didn't learn when we were little

    Thank you. I was looking for healthful breakfasts I can make and eat throughout my work week. Now I have one more to add to my home-cooked prepared in advance foods. Carolyn at family homestead has a delicious breakfast casserole that I make. Another change up from egg dishes is an oatmeal "cake", which is really just oatmeal with other items added like seeds, fruits, maple syrup and less water so that it holds it shape when cut.
