Ingredients: -1 red onion -2 cloves of garlic -1 large carrot -1 tbsp butter or olive oil -3 bone marrow -handful of mushrooms -salt and pepper -garlic powder -half a lemon -few bay leaves
Instructions: -preheat your oven to 450 F -line a baking tray with tin foil and grease with olive oil. -place bone marrow on the lined tray and roast in oven for 20 minutes -while the bones are in the oven, cut carrot, mushrooms and onion into large pieces. -pound garlic using flat edge of knife (see video) -turn your instant pot on the “brown” setting and add a tablespoon of butter or olive oil. -add all the veggies in the pot and cook until aromatic. -once bones are done roasting in oven, place them in your instant pot. Add bay leaves on top. -fill pot with water enough to cover bones. Squeeze half a lemon. -add salt, pepper, garlic powder. Recommend not over salting as you may want to use the broth in the future for other recipes. -close your instant pot and turn on high pressure cook for 2 hours. -once it is done cooking and pressure is released, strain the broth and veggies so only broth is left. -divide broth into containers or jars and refrigerate. Side note: white fat will form on top once refrigerated. You can either leave it on or scoop and discard that part.
