    Making use of the leftovers is great. But actually, Adobo gets better as it ages. Along with other Filipino dishes that has been cooked in vinegar (i.e. Kilain/Kilayin, Bopis, etc.) Its flavors amplify every time you reheat it. So, I wouldn't make it as salty at first since it will get saltier when you reheat. It also won't spoil because you got the vinegar and in your case, sugar (not all adobos have sugar) act as preservatives.

    So what your telling me is my grandma witch is 100% filipino is making my favorite dish wrong she makes it’s like a soup that we put onto fried rice with a chicken breast that’s been cooking in the heavenly sauce for a hour

    Hello @joshua weissman, next time you cook adobo, have some sliced tomato on a bowl and drip some fish paste (bagoong), your adobo will have multiple flavors 😀

    The dumplings are ok, but if you just don't add the sugar, adobo is good for up to 2 weeks without refrigeration. I have even eaten adobo in the province that was over 1 month old. Adobo is not just a recipe, it is a way to preserve food for Filipinos hundreds of years ago.

    You're making me complain like Uncle Roger the moment you fry the chicken separately from its sauce. You are not supposed to do that next time. I thought when ypu do that, I am watching a marinated chicken frying. We do that to our fried chicken not in our Adobo. But, over all it looks nice, it seems delicious.
