This looks great. Will try! Question: why use a closed cake tin and not springform? These have never worked for me. I notice the edges are lower and clearly it's not a rising cake aside from the egg whites. But still, there common low edge springforms out there and it seems needlessly treacherous. Maybe I'm missing something.
