    I buy 3 or 4 bags of stir fry veggies from Walmart on every grocery run. I use my rice cooker to cook 2 cups of rice or millet. My husband and I have one big dinner and multiple lunches with this food. I use minced jarred garlic, onion powder and minced ginger, either in a jar or tube, plus a little coconut amino or soy sauce. This is a once a week meal for us, easy peazy. I agree that this meal is inexpensive and easy, plus it's yummy. If I have a little seitan homemade (yes, it's gluten containing food), I might thaw it and throw it in but most times I don't add it. If my husband has had a particularly long training run, I'll add chickpeas or tempeh if I have one on hand, so he gets a few extra grams of protein and calories. I love that I don't prepare chicken anymore. I used to think stir fry and fajitas had to have chicken. I'm happy I never have to prepare chicken again!! Love your ideas. Keep them coming.
