Here's a fast good Mexican concoction.
One big box frozen taquitos, chicken or beef, preferably with cheese.
One big can refried beans.
One big can red enchilada sauce.
One big bag Mexican cheese.
Spray casserole dish with Pam or whatever brand spray you have.
Layer starting with taquitos and ending with cheese.
Bake at 375 for about 45 minutes. Keep checking, everybody's oven is different.

My take would be to add a small can of enxhilada sauce onto it before the sour cream mixture just to keep the meat and tots from getting dry and add flavor. 🔥🔥🔥🔥🔥

Now that looks great! I’ve never use cheddar cheese soup though. Definitely will try it. I’ll also add some olives, diced tomatoes, and maybe do a separate dish with Pollo (chicken)

Yes you can eat the cheese soup straight out of the can. ANYTHING that comes out of a can is cooked prior to being sealed in the can. So it's perfectly SAFE to eat.😉
