    How to cook dried chickpeas and/or beans…The hardest part is remembering to soak ‘em!

    But first, why? Chickpeas are a nutrient powerhouse just waiting to be unleashed, literally! Soaking dried chickpeas signals to them that it’s time to awaken and sprout. Any inhibitory anti-nutrients diminish and what’s left is a tasty and versatile, protein-rich, superfood!

    Chickpeas are loaded with protein, iron, calcium, magnesium, folate, manganese, copper, vitamin B6, and fiber, and beans/chickpeas are one of the foods that all of the @bluezones of the world (where people are living the longest) have in common!

    You can enjoy them atop a salad or buddha bowl, make chickpea patties, hummus, scramble, and even cookie dough!

    1⃣ Measure about 1 cup of dry chickpeas and pour into a large bowl and soak in filtered water for at least 6-8hr or overnight. Lately I’ve been doing 24hr and they’re SO juicy and soft!

    2⃣ Drain and rinse. Add to pressure cooker or pot and fill w/ fresh filtered water until cover by about one inch of liquid.

    3⃣ Cook on high pressure for 15-16min with natural release in pressure cooker, or simmer on stovetop for ~2hr. Pressure cooked is such a game changer bc it’s easier and quicker!

    Cooking legumes for me: 1.soak, 2. Drain and rinse, 3. Bring to boil, discard first water with foam, 4. Add fresh boiling water, add kombu, cook until tender.

    That way of cooking minimizes bloating … would love. A pressure cooker though.
