What a GREAT idea to bake the brown rice! I should have thought of that, because 7 or so years ago I discovered that the easiest way to make polenta was by baking it and I was SUPER happy not to have to worry about burning the bottom of the pan and standing at the stove stirring. I've been boiling the brown rice like you do pasta for the past few years but always feel like I'm losing a lot of nutrition into the water that gets discarded. I'll definitely be switching to baked brown rice!
