To a large bowl, add the stuffing and 4 tbsp of melted butter and stir well to coat the stuffing. Remove 1/2 cup of the stuffing and set aside. This will be the topping for the end. To the bowl with the majority of the stuffing, add in the cream or soup, zucchini, onion, chicken, sour cream, half of the cheese, salt, and pepper. Stir well to incorporate the ingredients. Spray a 9×13 baking dish with non-stick spray. Spread the casserole evenly in the baking dish and top with the cheese and reserved stuffing. Bake for 40-45 minutes. Enjoy!

My mom has a very similar recipe. No chicken or cheese, uses cream of chicken and sour cream instead of mushroom, and she grates the squash and adds carrots. It’s one of the few obviously-has-squash-in-it recipes my kids like, besides squash bread. 😂 I’m curious about this version though. Maybe now we’ll have another squash dinner on our list of faves!
