    The general rule of thumb is temperature = speed of roller

    I can assemble and roll pretty quickly so I prefer hot water as it soften it up fast. If you’re slower I would recommend room temperature water.

    We also have an thinner rice paper that doesn’t require water and soften ups with just the moistures from the ingredients.

    There also type of rice paper that is meant to be eaten hard. We use it to make BÁNH TRÁNG TRỘN which is basically an rice paper salad and it usually contains chilli, green mango, peanuts and lime. It’s an popular street food in Vietnam. 😂

    I tired rice paper today. All I have to say if you youve never tried and and have a texture issue this is NOT for you!!! I almost threw up after trying a recipe with rice paper. NOBODY TELLS YOU ITS SLIMY!!
