Ingredients:
Sweet potatoes (cooked) – 6-7
Eggs – 3
Salt & pepper – to taste
Extra virgin olive oil – 1 tbsp
Onion – 1
Bell peppers – 2
Ham – 5 slices
Shredded cheese – 1 ½ cups
Preparation Steps:
Cook sweet potatoes. I'm using the 'Instant Pot Magic' method (16 min on high, then 10 NPR – Not Potentially Ready, just Natural Pressure Release 🙃).
Roast peppers and sauté onions.
Beat 3 eggs and mush with potatoes.Add cooked onions, salt, and pepper to taste.
Create layers in the medium-sized oiled skillet. First, a layer of potatoes, then peppers, ham, shredded cheese, and top it off with another layer of potatoes.
Cook on minimum low under the lid or foil for 30-35 min.Carefully flip it using the help of the board or plate. Remember, we're going for a 'Ta-Da' moment, not a 'Uh-Oh' catastrophe!
