Such a lovely video 😍 Do you use organic veg for your broth? I'm never sure whether that's necessary (it's sooo expensive) or not. I'm trying to avoid food waste also – the strawberry tops make really yummy cold water when infused in it!

Thank you Erica for being YOU ❤. You are ME. Our lives are not always perfect but YOU the person are very close to perfect. So try not to doubt yourself and be proud of the special person God has sent to us to teach many things and help us stay calm and faithful. You have saved my life. My mental health. You help me be calm. You teach me to persevere even when things are so insurmountable. When you get frustrated with yourself you act just like me but what I'm learning from you is the part after that. To be kind to myself. Have a can do attitude and just keep moving forward. So thank you thank you thank you. You have saved my life in several ways and my family is better for that.
In regards to your mother and brother I'm so sorry you have to go thru the heartache. But it only hurts because you loved them so hard. You will be calm most days but they will remind you of those good memories every now and then❤. My mother died of brain cancer at 62. I had just had a baby and was close to her. That was 25 years ago but it seems like yesterday. When she reminds me of that love I breathe and think of our good memories and many laughs. It feels a little more bearable each year that passes but the love and memories remain. Thank you for helping me

YES to future simple living videos of all kinds…that orange juice trick with strawberries sounds cool, but I tend to go into a cookie monster mode and gobble ALL the strawberries so will likely never have moldy berries 😂

I’m here for the decluttering, but this was great also. Specifically extending your food budget for two days—challenged me to think how I could do the same with what I already have.

My favorite part of this was when you tied your hair back: we all lose hair every day and keeping it tied when cooking is a guarantee there won’t be any strays in the food! What a peaceful video this was and yes, do more of these especially with the no-lyrics music. Very relaxing. You are my favorite vlogger!

Yes, dear Erica. Your video has done way more than simply show us how to extend your food budget. It's an oasis of calm and hope in this chaotic, even terrifying time. I'm over 80 and have watched you since your earliest videos when you were trying to clear an unimaginable mess. You have come an amazingly long way. And now I think this quiet and calm path, if you choose to take it, can be exactly what we are all craving. All my best wishes as you keep moving forward in life. 😊

Yes, Yes ❤ this reminds me of my mother puttering in the kitchen humming and putting together a stew, or beans! I enjoy when you share your garden or decluttering an area you show us how to be slower and simple in these tasks ❤❤❤

I’m not even done with the video and I’m finding it so relaxing. Love the music too and totally love watching you throw the veggie scraps in the pot! I’m thinking, I need to start doing that!

Erica, thanks so much for this, it was exactly what I needed.

An idea for you: We make vegetable paste rather then broth. To do this we safe veggies or buy so called "soup veggies" which are pieces of older veggies that the grocery stores combines and sells for cheap. Add salt, let cook, blend et voilà. 😊 Stays good for month because of the salt.
Only downside: If you produce with kids don't let them taste. 😅

I LOVE LOVE LOVED this video. I would love more like this. Also, I would be super interested in a list of meals in your monthly menu plan. Is that something you'd be comfortable doing a video on. Meal planning is my biggest struggle. I've tried and failed many times.
