This is like "aloo tikki" from India where there's really no stuffing rather than some spices and potatoes
You could do baked potato mix’s ie chives, bacon, cheese, etc. and if you want spice you could chop up a jalapeño and it to you the mix🤔
Could have added eggs to bind better

Hi Lisa! I have two recommendations for you below:
First is ramen dumpling and I have tried it before with a bit of meat and used the Jin mild ramen
Another recommendation I have is ramen salad. I’ll just let you figure it out 😂
I think for pancakes in general you should just pan fry it instead of deep fry. It'll be lot easier to work with and you don't have to worry too much about the oil, much less having it pop, especially if you're putting a thin batter. It'll have a crispier texture too which I find more satisfying in these savory pancakes
I would have done less oil in a very hot pan and flattened them out a bit more. Like a latke! 😁

Maybe grating the potatoes vs baking and mashing them so you have more of a hashbrown texture?
