Why did you throw away the mushroom/stem/stalk/foot? Ive seen other chefs do that to but they are just as good as the cap in my opinion but is there a pro reason why you throw it away or just personal preference?
Next time you are in Melbourne, Australia DM. I will introduce you to my wonderful in laws – eat all the dinner meals together, sometimes 10pm waiting for Coq en Vin or something from a cook book 🙂 ✌️
