These are my all-time favorite cookies. My 84 year old Mom makes them and mails them to me every Christmas. Pignoli nuts are kind of expensive these days but she loves me enough. The crunch of the nut but then the chewiness of the cookie makes my mouth happy. So glad Christmas is coming soon.
I've never heard of these but would love to try – if I can find some almond paste in the supermarket 🥰

I went for a walk and came across a very scraggly pine tree in a neighbor's yard. I noticed there were tiny seeds crushed all over the driveway and realized it was a pinon pine! So cool we can grow those in Colorado but I have to say they're not the prettiest tree 😅
Be careful with the Chinese pine-nuts. They can be metallic tasting.
