Looks great. If you did use tomato, would it go in the tempering or the main dal?
Don't salt the dal at the start, it toughens them and they take longer to cook. Always add the salt at the end.

We usually dry roast the moong dal before washing and soaking (dry roasting it gives a nutty flavour to the dal).
It all looks amazing and will make this. The finishing oil is so cool and something that could transfer to so many other dishes
