    Looks yummy, I've made something like this usually at the end of the week using what vegetables I have left. I lightly cook veggies likes onions, peppers, shredded carrots, spinach, broccoli etc just till softened let cool. Make a batter like pancake mix thickness using chickpea flour, water and whatever seasoning you want, I like to use a nice Madras curry powder and pinch of cayenne. Let that sit for 30 minutes then add veggies and mix. Spoon mixture onto a foil or parchment lined pan like you would cookies bake at 375 for 20-25 minutes till golden brown.
