    I’m 62 and vegan for 7 years. I just transitioned to a high raw diet but I still eat soups. I get those little sweet peppers to add to salads but I never thought to put them in a soup. Also, I purchased a spiralizer so I am anxious to make this recipe with spiralized zucchini and carrots. But I have 2 questions. First, what size crock pot are you using? Second, what was the purpose of rinsing the vegetables after you cut them? Seems that would be rinsing away some of their flavor.

    I leave the peel on the potatoes. Peeling is not my favorite task, and a lot of nutritious fiber and micronutrients/minerals are in the peel. Wash and chop, plus your use everything you paid for!

    I love to make soup. Veggie soup is so easy and inexpensive. Love it! Thanks for all your good recipes! We had a huge family and a gigantic soup pot – 20 qts. I’m just now trying to relearn to make meals in my crockpot that feed just me with plenty of leftovers to freeze.

To preface… I LOVE RHUBARB. Can you make a couple of rhubarb desserts such as a rhubarb cake or cobbler? Also how can rhubarb be put in apple, peach or cherry desserts? You are easy to watch.     I add frozen mixed vegetables from Aldi’s and frozen or fresh carrots and potatoes. No celery and I add better than bouillon vegetable broth. I may add garlic and herb seasoning and onions 🧅.

    When making soups like this I like to add a big can of V8. Okra would also be great in it. I would also add barley. Then top it off with cornbread or a big crusty bread. 🍞
    I always have a bag of cut okra in the freezer and a container of barley on the shelf. I love using frozen vegetables and keep as many as I can at all times. This would have been perfect last week when we were covered in snow and had a shortage of meat.
    Thanks for sharing while we're having cooler weather and rain. At least it's not more snow. 💕

    I make a easy vegetable soup. I brown hamburger meat and onions. Transfer the meat mixture to a crockpot. I add a large can of V8 and a bag of frozen vegetables. You can use any vegetables you like. I then add cook macaroni or rice. You can add more V8 if you like. Cook in the crockpot until nice and hot
