I think I would do cilantro, chives, a shake of fried shallots. Chile garlic sauce. And then a poached or soft-yolk fried egg. This would be a good breakfast dish. It's kind of really open to any sort of protein. Put some grilled fish on that for sure. Or slices of medium raw flank. Or you could take it indian with some drizzles of raita, a shake of garam masala.

As an aside, please don’t let your cat out if it keeps killing birds. Cats kill SO many and their populations are vulnerable. Indoor cats do better as well.

I love my pressy downy. I use it for butterfly chicken to grill cheese sandwiches. The man of the house does the grilling though in our abode. Fewer flare-ups that way.
