    Why do you never taste your food as you are cooking? I've always heard good cooks "taste" before seasoning. Seemed to me like a lot of salt! So I was wondering about that, Flo. Soup does look amazing. Too bad there isn't "Smell-A-Vision"! 🙂

    OMG, this looks so good. The only change to this soup is I will not put in the whole cream (the whole family is lactose intolerance) and have it when you have it done. I thought the Dude was also.

    Cold and grey here in Oakland. I was going to have soup out of the can until I saw your recent post. I'm using trumpet and porcini mushrooms sauteed with 1/2 an onion with a little cream but mostly milk based.

    Interesting. I might just have to try this even though I've never been inclined to make mushroom soup from scratch. However, my son loves mushrooms in any shape or form so, I might reward him and make this! 👍😁

    You’re actually correct not to salt the mushrooms while sautéing because the salt will draw the moisture from the mushrooms almost instantaneously. To combat that issue simply salt at the very end of the sauté. 😉
