I made this for dinner today and I. Am. In. Love. Best soup I've ever made and the first time making anything entirely plant-based. I'm SO STOKED! What a soup! The gremolata was so incredibly worth the few minutes of chopping. My partner could not stop remarking on how good it all smelled while it was cooking and how YUMMY it was once we were digging in. I always make a double batch of recipes in Winter & freeze them in individual portions for myself. So I made a double batch of this soup & it is so delicious. I won't be making the gremalota since I'm freezing it all. Thank you so much for showing us how to save those expensive herbs. I will also be freezing the Rosemary/Sage left over from this recipe.
