We just butchered and had a couple briskets. I didn't know what to do with them because I don't have a smoker. I found a recipe on how to brine brisket to make corned beef. So I did that Monday morning. So, by St. Patricks day I will have corned beef. I will use the instant pot to cook this, just like you did. This recipe is perfect timing!-Matthew

Hello from East Texas! I can’t even remember the last time I had Corned Beef n cabbage. Probably when my Gram cooked it. Decades ago…and I’m 67. I also have an INSTAPOT …lol…and I’ve been terrified to use it 😅. This recipe will be my excuse. Thank you for the tutorial

FAT CAP UP SO THAT IT FLAVORS THE MEAT! Also when done, scrape that fat cap off. No one wants to get a mouthful of greasy fat!

The kids are all coming over Saturday for this dinner. I make many to feed 19. Usually cook on top of the stove but Lat year I also roasted some in the oven rubbed mustard and brown sugar and poured apple juice. Green jello, pistachio ice cream, pistachio cake and a delicious baileys cake for dessert. We are Italian so we also have St. Joseph pastries. Any time you can bring family together is a good time.

Perfect timing I'm making corned beef this week. I always slow cook mine in the crockpot but now I'm definitely trying my instant pot. Looks so much quicker.

HaHa, This is great because I cooked my corned beef in the instant pot the last time I made it and don't remember how I did it! My family loves this meal so much and I really only cook it for St.Patrick's Day. I have to cook a second round of meat only because they also want Reuben sandwiches with left overs.😋
