    I was only recently diagnosed with celiac disease so I’m trying to learn about gluten-free cooking. I noticed that gf flour was recommended however no mention was made that gf corn meal should be used. According to Quaker, their corn meal isn’t certified gf because there is the possibility of cross contamination with wheat in harvesting and production. So, should the corn meal be certified gluten free or is regular corn meal ok to use?

    Hi I have recently been diagnosed with celiac and on the lookout for gf recipes..thanks for the simple easy recipe..just one question..is cornmeal same as polenta? I'm in Australia and we have the yellow polenta and white one.not sure if it's same as cornmeal just different names.
