    Made this tonight for dinner and it was amazing. I made just a few changes because I was using what I had on hand. Subbed the kale for spinach and used Beyond Meat Italian sausage. Didn't have any facon and I'm really not a fan of that anyway. I deglazed with a little white wine before adding my homemade stock and added some vegan pesto at the end because I had it. So delicious. Tks for the recipe.

    I make a knock off version of this soup as well, it was always my favorite thing at Olive Garden. I honestly don't put any mock meat in it though, or the butter (I don't miss it, it's a great creamy vegetable soup). I use the unflavored Nut Pod creamer instead of canned coconut because it doesn't have a coconut flavor (although it does still have coconut in it). Great video!!!

    Mmmmmm!!! May have to put this on the weekend menu. I love that you had tips for low or no waist cooking. I think you two could do a video on just that idea.

    My favorite is keeping vegetable scraps in the freezer then make vegetable stock when I have enough for a big pot.

    I used to love this soup! Will definitely try. Seems like it makes a lot so I would definitely need to freeze or try to cut recipe in 1/2. Thanks so much for the effort you put into making it.
