If you don't like the onions in there, you should add it to the pepper and garlic when you blend it. Then you'll get the flavor without having the onion chunks in there!

My boys just asked me to please make this for them tomorrow. Our mouths are watering already!
What I like to do, especially with electric stoves because they can still be really hot on low, is move the pot off the heat and then add the cheese. I'd move it back on the low heat burner if necessary. If you add in the cheese and it's too hot, you sometimes get a grainy texture in your sauce. Still tastes good, but might be a little off putting.
