    Always had celery stuffed with homemade pimento cheese. My chicken salad has celery, mayo,sweet pickle relish and salt to taste. To get fancy (lol)add some chopped toasted pecans. One idea for sandwiches could be egg salad. One of my comfort foods. Really simple,hard boiled eggs chopped, mayo, sweet pickle relish to taste and salt and pepper to taste. I DO NOT add mustard. I like mustard in my deviled eggs. You are doing a wonderful thing. So proud of you.

    Banana Pudding has to cook to 175-180°f (use candy thermometer), not be overmixed, have proper egg to liquid ratio(1 egg per 3 ounces of liquid), and use whole milk, also don't leave out in open space too long after cooking or uncovered in fridge best ate within 2 days of being made and covered with saran wrap touching the meringue.

    Salmon or tuna loaf was something my mom loved (she was born in 1922) and it was a big deal when she was growing up. Dad and I learned how to make an easy tuna 'loaf' in a 9×9 pan, which gave us 9 servings. Served up with creamed potatoes and carrots or creamed peas – that was one of our fav. meals for ages. With banana pudding, there is less liquid with instant puddings, for some reason, and two layers of nilla wafers also help with absorbing that.

    I've made chicken salad a lot of ways, but the one way that people really seem to like, is with mayo, cream cheese, salt, pepper, garlic salt, Celery seed and yellow curry powder. You can add in celery, onion, apples, grapes, or whatever you like. I'm not sure why, but the curry just takes it up another notch that people seem to love. Works with tuna as well, but the chicken is the best.

    My mom is 89 and lives in an upscale assisted living facility that has actually very good food. She loves taco night especially if they have guacamole! If your lady loves soup you may want to ask her if she likes split pea with ham, lentil soup or potato soup with ham…those are my mom’s favorites.

    Thank you for more great ideas. My family has always made banana pudding by alternating vanilla wafers and sliced bananas then using a large box of cook and serve pudding (either banana cream or French vanilla whichever is available) cooked in the microwave for 8 minutes stirring every two minutes then poured over the layered wafers and bananas. After it has cooled completely leftovers can be stored in the refrigerator. There will be a little water the longer the leftovers sit, but not as much as you had.

    I absolutely hate apple or grapes in a chicken or tuna salad. Overly sweet foods in a savory dish is too jarring to my taste buds. I know someone is going to clutch their pearls and say something about tomatoes being fruit, but it's not the same, to me.

    My chicken salad has become so intricate lately. I do rotisserie chicken chopped up, with apple, red onion, green onion, mayo, a little kewpie (Japanese mayo) if I have it, dried cranberries, toasted walnuts, salt, pepper, smoked paprika, a teeny tiny bit of mustard (I dislike mustard). And then I eat it with sliced cucumbers.

    I’m almost certain the water in the pudding is from the meringue, the same thing has happened to me when making chocolate meringue pie and a couple other meringue topped baked desserts. there was a watery, sweet syrup that collected underneath. It’s caused by overcooking the meringue from the best of my understanding. Watching you make it I was wondering if you would end up with the separation. I never learned how to avoid it unfortunately.

    Our chicken salad is dill weed and all the ingredients you used. My Mom used to mix canned crab, cream cheese, and Johnny's seafood seasoning and spread into celery sticks at Thanksgiving for us kids.

    Tbh when i saw those instant mash packs on sale near me (in canada) i had to try em and honestly theyre a pantry staple in my house now 😂 so easy to make but also you can spice em up a bit with added ingredients to your liking. Best part? They dont even have a weird texture or aftertaste hallelujah

    Does she cook the stuffed celery or swrve it raw? If raw, it makes me think of celery with pimento cheese because i feel it would similar at the end. Maybe she had it at a party one time and tried to make a diy version and thats what she came up with?
