Ok so lot of comments about subbing the bun…heres the thing. This bun is called Bai Ji Mo and the it's been around for hundreds of years. The bun is very unique, it has sear patters on the outside otherwise it's pure white. It's thin with a subtle crunch and is basically the go to "bun" for the northern Chinese and it is just as important as whatever goes inside it. So I do encourage everyone to make it and try it because it is a very unique Chinese dish.

Really the only reason why they say "enough" is for personal preference. You're supposed to season something to taste depending on your own tolerance or any medical situations that make it difficult to eat salt.

The worst channel in regards to this is "Sue and Gumbo". Their recipes are awesome, but he just says to add a little X in broken English and then dumps like 3 quarters of a tablespoon of that stuff in there. Man I love that channel. 🙂

I honestly have to thank you for this recipe, for two reasons, one, it looks freaking amazing and I can't wait to try and cook it myself, but two, it prompted me to see if the instant pot is available in Australia AND IT IS NOW!!!!! So, now I've just gotta save up my bikkies and get one!
Thanks for a great recipe Mikey!
