    Southerner here, you’ve made a hybrid of what we would call Cracklin Cornbread with the bacon, and a Texas cornbread with the heat. The one thing we don’t do is add any sugar, and the fat in the skillet would be straight lard, probably from an empty coffee can. Otherwise looks pretty great. Give every slice a giant slab of butter and you’re in business. Looks delicious!

    Just FYI, the recipe on this video leaves out the baking powder.
    But I am so glad to finally see a recipe I can make because I dont have a Kitchen Aid mixer! I did make this and its fabulous!

    The only thing this channel is missing is some good audio on the stove. Like hearing the sizzling of batter hitting the pan would really complete the experience lol

    Claire, I love this idea of loaded cornbread. The definition of southern cornbread that you used is more of a white version. There have been articles written about the difference between white, crumbly, savory cornbread and yellow, moist, slightly sweet cornbread. They are both good and used in different food pairings. Also, we add in corn kernels, cheese, jalapeños, honey and other things into our cornbread in the south.

    Ummm your description of "real southern cornbread" sounds like a Texas style thing meant for chili. I'm Louisiana, and our cornbread is moist, sweet, made with flour and cornmeal and can be eaten on the side, with milk, or stand alone.

    This is a fancier version of Mexican cornbread (where Jalapeños are the main star) and can be made sweet or savory depending on the other additives (can include onions, honey, cheese, etc.).

    I had a Mexican corn pancake breakfast at a restaurant and it was amazing. This recipe is basically the same thing so I can make it at home now! Thanks Claire
